I’ll be honest, I usually prefer cooking fresh meals, but there are certain comfort food recipes that I always make extra of because they freeze really well or taste even better the next day. These are the kinds of meals that are perfect for busy weeks, feeding a crowd, or those days when you just don’t feel like cooking but still want something homemade. If you like cooking once and getting a few meals out of it, these recipes are perfect.

I actually love cooking most days, but I do like cooking once and getting more than one meal out of it. The problem is leftovers in our house don’t last very long because Remo always seems to find them. So if I really want a meal for later, the freezer is usually the safer place to put it.

A few tips that help a lot when freezing meals:
Always let food cool completely before freezing. If you freeze it while it’s still warm, it can create ice crystals and affect the texture.
Freeze meals in portion sized containers so you don’t have to thaw a huge container just for one or two servings.
Label everything with the name and date. You will not remember what that container is in two months.
Most cooked meals freeze well for about 2 to 3 months.
Soups and stews usually freeze very well.
Pasta bakes and casseroles freeze very well, especially lasagna, baked ziti, and stuffed shells.
Rice and pasta can sometimes dry out a bit, but adding a splash of broth or water when reheating usually fixes that.
Cream based sauces can sometimes separate slightly after freezing, but they usually come back together when reheated slowly.
Freezing meals is really just about making life easier later, and future you will always be very happy when there’s a homemade meal ready to go.
Storage And Reheating Tips
For meals that you plan to eat within a few days, the fridge is usually enough. Most cooked meals will keep well in the refrigerator for about 3 to 4 days in an airtight container.
When reheating comfort food, I usually find that reheating slowly works best so the food doesn’t dry out. A few reheating tips that help:
Reheat pasta, rice dishes, and casseroles in the oven covered with foil so they don’t dry out.
Add a splash of broth, water, or milk when reheating pasta or rice dishes to bring back moisture.
Soups and stews reheat very well on the stove over medium heat.
Meat dishes like pulled pork, shredded chicken, or braised beef reheat well in a covered pan with a little broth or water.
If reheating from frozen, it’s best to thaw the meal overnight in the refrigerator first.
Individual portions reheat very well in the microwave for quick lunches or dinners.
Some comfort food recipes are actually even better the next day, which is another good reason to make a little extra when you’re already cooking.
