Ingredients

Base Layer

  • 1 cup all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ¾ cup granulated sugar
  • 2 tablespoons unsweetened cocoa powder
  • ½ cup whole milk
  • ¼ cup unsalted butter melted

Hot Water Layer

  • 1 ½ cups hot water

Instructions

  • Preheat oven to 350°F (175°C). Lightly butter an 8×8-inch baking dish.
  • In a medium bowl, whisk flour, baking powder, salt, sugar, and cocoa powder. Stir in milk, melted butter, and vanilla until smooth. Spread batter evenly in the prepared dish.

  • Combine granulated sugar, brown sugar, and cocoa powder. Sprinkle evenly over the batter (don’t stir).

  • Carefully pour hot water over the top - do not stir. It will look strange but trust the process; this is how the sauce forms.

  • Bake 35–40 minutes, until the top is set but a gooey chocolate sauce bubbles underneath.

  • Spoon warm cobbler into bowls, making sure to get both cake and sauce. Serve with vanilla ice cream or whipped cream.

Notes

  1. Do not stir the water after pouring it over the batter. That is how the sauce forms under the cake.
  2. Use high-quality unsweetened cocoa powder for a deeper, more intense chocolate flavor.
  3. Serve the cobbler warm. The sauce is at its most gooey straight from the oven.
  4. Reheat leftovers gently in the microwave for 20 to 30 seconds to bring the sauce back to life.
  5. You can mix the dry and wet ingredients separately ahead of time and combine them just before baking for easy prep.
